Improve documentation of sendmail.el defcustom's

* lisp/mail/sendmail.el (mail-archive-file-name)
(mail-default-reply-to, mail-self-blind, mail-default-headers):
Say in the doc string that 'message-default-mail-headers' shall be
customized when using 'message-mode' for email composition.
